Hailing from rural Chiayi, Chef Kim Chang started his culinary
journey at the age of 15. Over the past 25 years, he has visited
various food sources across Taiwan, respecting the essence of
ingredients and adhering to the natural health principles of the
four seasons. He transforms traditional Taiwanese ingredients into
surprising Western cuisine. His lifelong wish is to showcase
Taiwan's brilliance to the world through food.
"Rural Flavor" Western Restaurant serves authentic French cuisine
that respects the original flavors of Taiwanese local ingredients.
Through continuous exploration and experimentation, Chef Chang
integrates cooking with nature, which he believes is the best way
to protect the land. This culinary skill also embodies the core
concept of "French-Taiwanese fusion cuisine."
